Did you know there are actually two main types of cinnamon?

You're probably familiar with the one commonly found on supermarket shelves called cassia cinnamon. Cassia has a bigger more intense and singular flavor.

And then there's the less common type called Ceylon cinnamon. The special stuff. The crème de la cinnamon. Some call it true cinnamon or Mexican cinnamon.

Ceylon cinnamon is the one that many bakers and chefs seek out. It's the variety we've sourced for you.

So what's the difference?

Both are harvested from the inner bark of evergreen trees. But the two varieties are grown in different countries and have different chemical compounds. 

Then there's the taste.

Someone said that tasting Ceylon cinnamon is like listening to your favorite vinyl record on a $4,000 stereo system, while Cassia cinnamon is like listening to an mp3 version in the car. I don't have a stereo like that, but I can imagine. 

With Ceylon cinnamon you will notice nuance - lighter, brighter citrus and floral notes. Ceylon is ideal for pastries, cakes, drinks, soups, and desserts. It charms without overpowering.

We recommend our Microplane Spice Mill for grinding our Ceylon cinnamon bark. But no worries If you prefer not to do your own grinding. We also offer ground Ceylon cinnamon.

Delicate, mellow, complex, and sweet just like they advertised! I made a rice drink( Horchata Yummy for sure!) All you need is a sniff

Look, I don't know much about spices, but I know that in cooking those little details can take you far. This cinnamon smells incredible and the taste is there to match. I made a simple cinnamon sugar mix to put on top of a pumpkin bread and the results were fantastic. The only way it could be better is if I grinded the cinnamon sticks myself which I might do in the future. I definitely recommend the cinnamon and other spices from this company.

A step above.

I was expecting a traditional cinnamon fragrance when I opened the canister what hit me was so much more complex. I used it in my chai I make myself first, it adds a dynamic flavor I won't be able to live without. Thank you.

So this is what cinnamon is supposed to taste like….

I have not tried Ceylon cinnamon before but will never buy any other kind again. This is sweet and adds so much in a subtle way. The texture is nice too; almost like very fine shavings rather than finely powdered. This is another great discovery for me from Reluctant Trading.

I ordered the Cinnamon Bark for making a Cardamom, turmeric, ginger tea. After trying this I will never go back to store bought cinnamon sticks again.I also bought the Cardamom pods which were equally great! Will definitely be buying again.
