Let’s face it, it’s pretty difficult to find delicious fresh mangoes in the States. I’ve been lucky enough to taste fresh mangoes in season in Southeast Asia. And wow. Just wow. When fresh mangoes aren’t a possibility, many cooks turn to Amchoor.
Amchoor (also spelled Amchur), is the powder of dried, unripe mangoes. Since mangoes aren’t always in season in India either, Amchoor is used during these times.
Amchoor adds a sour, tangy, fruity flavor to food. It’s a key ingredient in chutneys, samosas, pakoras, pickles, marinades, stews, and fruit salads. It is best stirred in at the end of cooking to preserve its flavor.
Feel free to experiment with Amchoor in non-Indian dishes too. Works well with pork or as a rub with chicken and fish.
